Every one loves cookies, right? A lot of people like the cookies that you buy at the store. You know; those ones that have the pink frosting! (Mmm...) A lot of people like to make them, too, but what happens when you get to passover? You have to throw out all of your cookies the day before passover starts, and you haven't gotten even one! :(
But I have the solution. Try making these chocolate chip oat meal cookies. They have no leavening and no eggs, so you can eat them raw, too! I make these often for my family. They're good to eat, good for your body, (as good for you as you can get with cookies) and are easy to make. Enjoy making them!

Emma's Pesak Cookies!!!
Ingredients
2 1/2 cups of pastry flour
1 cup of rolled oats
1 1/4 cup of Chocolate chips
1 tsp salt
1 tsp vanilla
2 tbsp water
3/4 cup of coconut oil
3/4 cup of honey
Preheat oven to 350. Mix flour, oats, chocolate chips, and salt together in large bowl. Then mix vanilla, water, coconut oil and honey in a medium bowl. Mix it until it's smooth and no clumps remain. Mix wet and dry ingredients together until well combined. I usually use my hands to do the mixing. Once the cookie dough is well combined, mold cookies into small balls and place on cookie sheet. Bake for 10 or 12 minutes. It's kind of hard to tell for how long to bake them, so you kind of have to figure it out yourself. In Fruita, we baked the cookies for 12 minutes, but with our oven here in Silt, we have to bake it for 10 minutes, or else they will burn. Any way, once your cookies are done the rest is simple. Take them out of the oven, put them on a plate and eat them up!
Here is a picture of some of the cookies. A single batch usually makes about twenty four cookies. For my family, I usually make a double batch, which makes about seventy two cookies.
